This simple dish is really tasty and extremely easy to make. It takes all of twenty minutes from the time you peel the potatoes till you serve. Here's what you need -
 Aaji's Vegetarian Thaali
Ingredients

4 mid-sized potatoes, peeled and sliced into slightly thick stripes (like french fries)
1/2 teaspoon mustard seeds
1/4 teaspoon asafoetida
Salt to taste
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
2 tablespoons water
1 tablespoon oil. I use sunflower/groundnut oil.You can use olive oil too.

Method

Heat a non-stick pan/ vessel on low.
Add the oil.
Once hot, add the mustard seeds and asafoetida.
Add the potato slices.
Stir fry the potato slices well.
Add the turmeric and red chili powder.
Continue stir frying.
The potatoes will turn a nice brown shade and cook within 15 minutes (this would depend on the thickness of the slices).
You can add some water if you wish and continue stir-frying.
The potatoes should start getting slightly crisp and there should be no water.
Add salt. Mix well.
Take off the heat and serve hot with rotis. You can also use this as a filling between two toasts or serve it with rice and daal.
