I ate this delicious salad in Greece and fell in love with the simplicity, taste and texture. I got back home and tried making this yesterday (I always do this after a holiday) and was really happy with the results.
I have modified the dish a bit to make it healthier :) Yup, that's me - the crazy woman who watches the oil, sugar and salt;)
Ingredients
3 big potatoes washed, peeled and then cut into thin round slices.
Handful of parsley leaves washed and chopped
Sea salt to taste (feta has some salt so be careful while adding salt)
1/2 teaspoon ground pepper (more if you like pepper)
100 gms feta cheese, crumbled
1/2 teaspoon paprika flakes
2 tablespoons olive oil to coat the potatoes and bake them
Method
In a big bowl, add the olive oil and potatoes.
Mix well so that the potatoes are well-coated with oil.
Place the potatoes on a tray and place in a preheated oven (180 degrees C) for 40 minutes.
Once crisp and cooked, take them out.
In a glass bowl, add the potatoes.
Add the crumbled feta, paprika flakes, ground pepper and salt.
Mix well.
Top with parsley leaves and serve.
