Carrots as you  know are very good for health and I like to include them in my meals at least once a week. I make desserts, drinks and also use them in my salads.
Here's one great salad recipe -

Ingredients
1 big carrot (We get big carrots in Holland. They are called winter peen). You can go with 5 -6 carrots if you get smaller ones.
2 green chilies, chopped finely
2 teaspoons chopped coriander leaves
1/2 teaspoon cumin powder
1/4 teaspoon sugar
1/2 lemon juice
Salt to taste
Roasted groundnuts chopped in a chopper but not too fine. If allergic to nuts, skip this.

Method

Wash, peel and grate the carrots

Add the chopped green chilies, the cumin powder, salt, sugar and lemon juice.

Top with coriander leaves and chopped groundnuts if using.

Mix well.

Serve at room temperature or cold.

This salad goes well with a vegetarian or non vegetarian main course dish.

Alternatively, you can simply use this as a filling in a sandwich with grilled chicken pieces and a bit of mayo. Tastes sensational.

I tried making your radish daal and also your apple pudding and my partner and I enjoyed them both. We look forward to new recipes now and this salad looks very interesting.     Thank you for your comment and your words of encouragement. It is comments like yours that make me want to keep writing :) I am glad that you enjoyed some of the dishes on the website. I hope to introduce you and other readers to more flavours. I aim to make food tasty and healthy. For chicken, you can marinate it first in a ginger-garlic, green chili,coriander leaves and salt paste and then grill it. Or you can always used boiled shredded pieces of chicken.
