I make this dish when I am rushed (generally when the work load is intense) and have less than 40 minutes to make and serve dinner.
I had just 4 eggs so I made with 4. You can add 2 more to the same proportions.


Ingredients

4 biological eggs
3 mid sized tomatoes chopped
1 teaspoon cumin seeds
1 big onion chopped finely
1 dried bay leaf
1/2 teaspoon garam masala
3 green chilies chopped finely
3 cloves garlic chopped finely
1 teaspoon grated ginger
Salt to taste
15 gms coriander leaves chopped
1 teaspoon oil ( olive oil is fine)

Method

In a broad pan, add the oil.

Once warm, add the cumin seeds, bay leaf and green chilies.

Stir fry for a minute and then add the chopped onion, ginger and garlic .

Add a pinch of salt to quicken the browning of onions.

After about 8-10 minutes, add the chopped tomatoes with their juices.

Fry for 6 minutes till the tomatoes start turning pulpy.

Add the turmeric powder, garam masala and a cup full of water.

Cover and allow to cook for 8-10 minutes.

After 10 minutes, take away the cover and gently break 4 eggs into the pan.

Make sure the egg yolks stay intact.

Allow to simmer on a low flame for 5 minutes then cover and allow to cook for 10 minutes.

You can choose to cook the egg completely or keep the centre runny. That's a personal preference.
Sprinkle some  coriander when you are ready to serve.

Tastes great with whole-wheat rotis/parathas/ rice.
