You are wondering why I am covering something as simple as a sandwich here but I truly believe that a sandwich that's well-made is a delicacy that you can enjoy sitting at home. It doesn't cost the earth but is a grand meal when you aren't in the mood to cook something elaborate but want something healthy, filling and delicious.


Here's what you need -

2 slices of smoked salmon. I use wild when I can.
Bread slices (you get to pick what type suits you)
A mix of salad leaves,washed and drained
Handful of micro-greens, washed and drained
Home made egg salad (recipe follows)
1/2 teaspoon melted unsalted butter

Egg Salad Recipe
Hard boil 2 eggs, shell them carefully, discard the shells  and chop the white into small pieces. Based on your dietary requirements, you may choose to crush the yolk and use it or discard it.

In a big mixing bowl, add 10 tablespoons mayonnaise, 1 teaspoon honey, 1/2 teaspoon mustard (I use French mustard), 1/2 teaspoon freshly ground pepper, salt ( I add 1/4 teaspoon as smoked salmon is salty),  1 teaspoon chopped chives, 1/2 teaspoon dried celery, 1 teaspoon capers ( you can use sliced brown olives if you can't find capers) and 1 shallot that's finely chopped. Shallot is optional but I use it because it adds a unique taste to the salad.  Add the chopped egg pieces and crushed yolk (if using).

Mix the above well and allow to sit for 20 minutes. You need to refrigerate this mix if you intend using it much later or the next day.

If you have refrigerated your smoked salmon, keep it out for at least 10 minutes (it needs to come to room temperature) before you assemble your sandwich.

Assembling

Slather the slices of bread with the melted butter.

Toast the bread slices on a pre-heated non-stick pan for about 6 minutes.

On one side, add a generous amount of salad leaves and micro-greens.

Add a generous portion of egg salad.

Next, add the smoked salmon slice or two based on how much you like smoked salmon :D

Add some more egg salad on top and some more salad leaves.

Top it with the remaining bread slice.

You may also choose to bake sweet potato slices and serve as a side with this sandwich.
