Marinated Okra pieces |
I did not take too many pictures last night because I had a hungry family waiting to be served. But I will definitely add some more pictures the next time I make this.
These are an absolute favourite at home and also with the many guests that I entertain. They go really well with mains or even with drinks. What's more, they are home-made and shallow-fried so healthy!
Here's what you need -
10 big okras washed and dried well. Use a paper napkin to make sure they are dry or they tend to get gooey.
1 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 teaspoon salt
1/2 tea cup rice flour
1 tablespoon olive oil/ sunflower/groundnut oil (your choice)
Method
Cut off the top and bottom of each okra and slit them vertically.
Add the turmeric powder, red chili powder and salt.
Mix well. (Make sure you wash your hands well after using red chili powder)
In a shallow non stick pan, add the oil and heat.
Coat each okra slice with rice flour and then place them on the hot pan.
Allow to turn nice and crisp before you turn them. Takes about 8-10 minutes (each side) on a medium flame. If you are expecting guests, you can always keep the heat on low so that they stay warm and crisp till you are ready to serve.
