I am sure most of you are wondering what to cook given the scarcity of ingredients in our respective pantries during this pandemic. Here is a really easy recipe that is  perfect as an afternoon snack with tea and uses very few ingredients. I have also added a fish-based snack recipe below in case you have access to some fish.

Ingredients for Corn Delight

1 small can of shelled American corn ( I use canned Bonduelle tin)
2 green chilis finely sliced
1 bell pepper (de-seeded and chopped)
1/2 tea cup of cheese that melts easily ( I had Mozarella but you can use Cheddar or even Parmesan if you have)
1/4 teaspoon black pepper powder
1/4 teaspoon crushed cumin powder
1/2 teaspoon chopped coriander leaves (optional)
Salt to taste ( I go with 1 teaspoon)
4 slices of bread ( I used corn bread. You can use whatever is available)
2 teaspoons Extra Virgin olive oil/ sunflower oil
Salt to taste

To serve : Tomato Ketchup/Chili sauce

Method

Coarsely grind the first 7 ingredients listed above.
Add the salt and mix well. Taste and figure out if you need more. I would stick to the given quantity because cheese is salty too. 

Cut the bread slices diagonally across so you have two triangles coming out of each slice. In this case you have 8 triangles. Keep the edges on the breads. 

Brush oil on one side of each bread and gently add the the ground mix on all the slices. 

Now, you may grate more cheese on top of each slice or leave them the way they are.

In a pre-heated oven (165 degrees C), you place these bread slices and allow to bake and crispen. 

It takes about 20 minutes. 

Serve hot with chili sauce or tomato ketchup.

Topping alternatives - If you are lactose intolerant, you can skip the cheese and add a boiled mashed potato instead. You can also use a medley of vegetables (based on what's available in your pantry). 


In this above photo, I served these toasts with smoked mackerel cutlets.
If you can't find smoked mackerel, you can use regular steamed fish (whatever is available).

Ingredients
2 cups flaked steamed fish ( mackerel or cod tastes great) if you cannot find smoked mackerel.
3 green chilis chopped fine (1/2 tbsp chili powder) - this depends on how pungent you like your food
2 mid sized potatoes  boiled and mashed
1 teaspoon fresh lime juice
1 teaspoon cumin-coriander powder
1/2 teaspoon finely chopped mint leaves
1 teaspoon finely chopped coriander leaves
1/2 cup rice flour
Salt to taste
Oil to shallow fry


Method
Mix all the ingredients except the oil. Use only half of the rice flour.
Make a smooth ball and split into small pattice.
Keep aside for 10 minutes to 20 minutes to firm up.
Heat oil in a pan.
Pat the pattice with the remaining rice flour and lay them in a single layer on the pan.
Allow them to turn crisp on one side before you turn them.
Try not to handle them too much so that you don't break them.
